Pearl Grouper Super-Size 2.5kg - 3kg

This heavyweight Pearl Grouper ("Long Hu Ban") yields thick, succulent grouper fillets. The flesh is smooth with collagen-rich skin.  Delicious whether steamed, fried (recipe) or baked. This large fish lives up to its name as a hybrid of the giant grouper and tiger grouper, both highly prized fish.  Tip for home chefs: If you're not freezing the fish for later use, leave it in the chiller for a day before cooking, for optimal meat texture. (Free service: upon request, we can fillet the fish and pack the 2 fillets and head+bone separately, or cut the fish into 2 head/tail cooking portions. More about cuts of fish...)
